Moon Meals was built to solve a simple and common problem: there weren’t any healthy, late-night snack for professionals in Chicago.
LaForce Baker, founder and executive chef of plant based company Moon Meals, found himself facing this very dilemma when he was working as a marketing strategist for major brands like Kraft-Heinz, ConAgra, and Nestle. How can young professionals continue to eat healthy while still burning the midnight oil?

LaForce created Moon Meals Plant Based Company to offer “healthy meals under the moon.”
Originally a small delivery service, one large catering order placed by a well-known, Chicago-based corporation changed the business’s trajectory. Moon Meals made its retail debut at 12 small local coffee shops around Chicago.
By 2015, Moon Meals food items could be found in grab-and-go sections of Jewel, Mariano’s and Whole Foods. LaForce continues to partner with retailers and manufacturers across the country to make tasty plant-based meals and ingredients more accessible to everyone in a healthy, affordable and convenient way.
Moon Meals™ provides plant-based meals containing our propriety vegan meats, cheeses and sauces to major retailers and foodservice operators. The company uses only the finest ingredients and tries to use local and organic ingredients. Moon Meals™ products have been featured in the “grab & go” delis of Chicago-area major retailers like Whole Foods Market, Albertsons, and Kroger. As a result of the founder’s success in using food to reclaim his health after growing up in poverty in Chicago, the company’s mission is to make delicious, healthy plant-based meals more accessible to everyone.

He manages day-to-day operations, new product development, sales, marketing and strategic partnerships. Prior to founding the company in 2012, he helped bring to market new concepts in national grocery chains for large food companies like Kraft, Conagra, and Nestle.
Thanks to the Fiesta Wrap, the company’s new vegan grab-and-go concept, the bootstrapped entrepreneur who overcame poverty is launching in all 187 Jewel supermarket locations in the Midwest.
The Fiesta Wrap includes Moon Meals vegan taco meat, vegan nacho cheese sauce, organic cooked black beans, organic cooked short grain rice, organic cooked sweet corn kernels and chopped jalapeno peppers, all contained in a spinach wrap.
